From the
grapes' squeezing they obtain a dark must, it is very sweet and
thick, and traditionally it is used for the production of the very
appreciated D.O.C. wine: "Primitive of Manduria".
Through the filtration and the pasteurization, the must retains
its vitamins (A, B, B2, C) mineral solts (ferro, sodium, magnasium,
calcium, copper)
and sugar (fructose glucose) restraining its alcholic fermentation.

And from these vineyards with his wise work of young farmer
at fist and then of careful worker, Ugo Arnò produces his
wine-juice: concentrated of natural energy the vineyards, of Primitive
variety (so called because the grapes ripen before other sarieties)
prodece ghrapes which have little like black pearl grape-stones.
